You need :
1 Aubergine medium size – cut roundway abot 1,5 cm thick
2 tomatoes medium size – chopped finely
1 garlic clove – chopped finely
Salt and pepper to taste
Olive oil
Cheese 100-150 gr( cheddar or parmesan - your choice )
How you do it :
1. Put the aubergine in a baking sheet, brush with olive oil quite generously, bake in preheated oven at 200 degree C about 20 mins or until soft.
2. Meanwhile cook the chopped tomatoes and garlic with little oil in saucepan until mushy.
3. When the aubergine ready, put the mushy tomatoes on top- spread evenly, and top again with the cheese ( grated for cheddar )
4. Put back in the oven for 15 mins
5. Ready to serve for 2 persons
